Gardening Australia visits Alice Star and Phil Garozzo who are trying to address the problem of food waste in the hospitality industry. They collect 2-3 tonnes of food waste each week from 16 commercial kitchens, then compost it at their farm in Draper on the outskirts of Brisbane to grow more food.
